A little bit of fire, a little bit of cool - this dish might just be the perfect lockdown dinner this Winter.  Follow this recipe to make your own Muscle Fuel all-time fav yourself at home!

Cajun Chicken and Couscous
4 x serves

Ingredients
Cajun Chicken
600g Sliced Chicken Thigh (Boneless / Skinless)
2 x Capsicum sliced
1 x Tin Sweetcorn drained
1 x Tbsp Cajun Spice Mix
2 x Tbsp Olive Oil

Couscous
250g Israeli Couscous
1 x Pottle Sundried tomatoes, sliced
10g Coriander, chopped (Optional of course)
10g Turmeric
1 x Spring Onion

INSTRUCTIONS

PREP THE CHIC
Put the chicken and spice mix in a large bowl. Slice capsicum, drain corn and add to the bowl. Mix well. Heat the oil in a large pan or BBQ to a medium-high heat. Once hot AF, add the chicken and char for 2-3 minutes. Reduce the heat and stir-fry for another 8-10 minutes - until the chicken is cooked through (you can check this by stabbing the thickest piece of chicken and pressing down - the juices should run clear, not pink and there should be no raw meat visible in the middle).

COOK-COOK THE COUS-COUS
While the chicken is cooking, bring a large pot of water to the boil. Peel the turmeric and grate into the boiling water, then add a pinch of salt and the cous- cous. Adjust the heat to a simmer and cook for 8-10 mins. Chop the sundried tomatoes, coriander and spring onion. Drain cooked-cooked couscous and mix with everything real good.

DISH IT
Place a heap of couscous salad in the middle of each plate and top with chicken and vegetables straight from the oven.
